Peanut Butter Chicken and Broccoli Stir-Fry

I love the thought of Chinese food.  Crab Rangoons (that recipe will post sometime I'm sure!), Lo Mein, dumplings, General Tso's chicken, pepper steak, egg rolls... where does it stop? I've tried other at-home stir-fry recipes before, but this is the closest I think I've ever come.  I also like the thought of controlling some of the calories and healthful parts of food at home.

So, what do you need?

From the fridge:

1 lb of boneless skinless chicken- I used chicken tenderloins because, well that's what I had....
4 cups broccoli florets
3 stalks of celery cut diagonally
green onions

From the pantry:

4 teaspoons vegetable oil
2 garlic cloves
2 packages ramen noodles (any flavor)
1/2 cup chicken broth
1/4 peanut butter (don't tell if I used a little more than that!)
2 Tablespoons soy sauce
1 Tablespoon honey


For the sauce, combine the chicken broth, peanut butter, soy sauce and honey.  If you like it a little zippy, add some red pepper here.  I didn't and it still tasted just fine.  Whisk it up a bit.  It probably won't look smooth, but it's gonna get cooked, so don't fret.

Get some water on to boil for the Ramen noodles. Save the seasoning packet for another use (I've got a fabulous salad dressing recipe I'll give you later on).  We don't want them mushy, so watch the boiling water and drain them after a few minutes.

Heat 2 Tablespoons of the oil up on high heat.  I used my tried and true cast iron skillet, but if you have a stir-fry skillet, don't let it go to waste, use it!  When the pan is screaming hot, add your chicken.  While it's browning on one side, throw in your garlic over the top.  Cook and stir until the chicken is nicely browned on all sides.  The secret to this is not to stir it too quickly.  When it's nicely browned, remove it to another pan and keep warm.

Reduce the heat to medium-high and add the remaining 2 tablespoons of oil.  Add the broccoli and celery and cook for about 2 minutes.  Then add in the green onions, and cook and stir for a couple more minutes.  Return the chicken to the pan and add your sauce.  Bring the sauce to a boil, then remove from the heat.

Add in your drained noodles and give a good stir.

Can it get any easier than this?
